New Downloadable Recipe Cards for our Virtual Cooking Classes

Good news for our cooking class students, we’re upgrading our most popular recipes with new, downloadable cards to help you prepare to cook with us. Each of the cards features fun illustrations from a local Thai artist, aimed at helping you remember exactly which ingredients you need to buy. This means shopping for your favorite Thai meals like pad see ew noodles, green curry, and tom yum soup is now even easier. You’ll be able to jump into our virtual cooking classes, hosted on zoom, knowing you’re fully prepared with all of your ingredients.

Each of the recipe cards feature illustrations to help you remember the most important ingredients to grab when shopping.

We know shopping for ingredients can be intimidating. In some stores even the aisle for soy sauce and fish sauce can seem endless and overwhelming. To complicate matters, some people may be dependent on online deliveries during the pandemic and need to make sure they’re purchasing the correct ingredients. We hope the recipe cards will make this process easier, helping you find the right ingredients for tasty renditions of your favorite Thai foods.

You can find the recipe cards in our virtual courses, like our Thai Cooking Class Starter Kit, with lots of supplementary info on ingredients. For example, a key ingredient for our Pad Thai recipe is tamarind. However, the tamarind you find in the stores comes in many formats, and we have had guests purchase sweet tamarind, instead of the sour tamarind pulp needed. The information we provide in the virtual courses (which are smartphone responsive for access on the go) and the downloadable shopping cards for the recipes should help prevent these mistakes.

Each live cooking session includes access to our virtual courses where you can download the recipe cards and find supplementary information on many of the most common ingredients.
We plan to add notes on which kitchen utensils will be most helpful when making Thai cuisine.

If you don’t already have access to a virtual course, you can purchase it, or receive access when you sign up for a zoom cooking course through Airbnb. In addition to these recipes we do take other requests in our private classes. If you’re planning a large cooking session or corporate learning activity, we would be happy to help.

As these course choices become more popular we will continue to add more recipe cards to new dishes and do our best to help you navigate cooking your favorite Thai dishes.

A Cooking Class in Bangkok’s Largest Flower Market!

This past weekend we had a very special activity for our junior chefs, our Courageous kids aged 11-14. This is a special age group because they have been watching their older brothers and sisters in the kitchen for several years now and helping in small ways. In 2018 however, we’re pivoting to focus on this age group more, and really working on building their skills and confidence.

This past weekend we jumped into Thailand’s most famous flower market, the Pak Khlong Market. In the Yodpiman building there, we met friends at a company called Expique who run several different types of cooking classes known as The Market Experience. The fun Thai food they create is not unlike what we cook in a typical Saturday in the Courageous Kitchen, but by pulling these students away, we gave them an opportunity to shine without pressure from their older brothers and sisters. In addition to this freedom, they also had a chance to explore the market, learning about it’s rich history and of course, having a plenty of small treats along the way.

After the students toured the market, the washed up and got ready to get their hands messy in the kitchen. The Expique staff was great with the students, watching carefully as they used adult sized knives, and helping the group prepare their ingredients for three dishes with precision. The excitement was palatable as the students rushed to answer the questions from our hosts, and experienced some new methods of preparing their minced pork larb, green curry with chicken, and shrimp pad thai.

At the end of the class, the students were beyond thankful for the opportunity. They went around the room (not without some prodding), sharing what they enjoyed about they class and expressing their gratitude to Simon, Alyssa, and the whole team of Thai teachers.

The day was a special one as the group was not without it’s kids who have persisted through extraordinary challenges in their lives. One young boy with juvenile rheumatoid arthritis in his knee had so much fun, he didn’t notice how long he had been standing. Another girl, who’s family had spent time in immigration, loved the outing and voted with a few of her friends to go swimming during the next school holiday. These are just a few stories of triumph over adversity the kids in the group, and seeing how far they’ve come, made us anxious to see what mountains they will move next!

Spoon, Fork, and a Whole Lotta Heart

We want our students and volunteers to know the most important ingredient in the kitchen is heart. That’s why we were proud to have Siri of the youtube channel Spoon, Fork, Heart to join a special cooking session where she taught two Thai recipes.

“The chefs and foodies who make the biggest impression are the ones who love people, as much as they love food.”

Siri isn’t the first friend from Youtube to check out our program and we certainly hope not the last. We’re always excited to connect with big hearted, like minded foodies and certainly appreciate all the help we can get spreading the word about our charity!
